Borsch with sour cream

Stuffed Cabbage Rolls

Preparation time: 45 minutes
Cooking time: 15 minutes
Serves 4-5
Ingredients:
125g pork mince
125g beef mince
50g rice, cooked
1 egg
3 shallot onions, chopped finely
1 small Savoy cabbage (1.2 kg)
1 carrot, chopped coarsely
½ leeks, chopped coarsely
1 litre chicken or beef stock
2 bay leaves
Salt
1/3 tsp freshly ground black pepper
2 tbsp chopped basil
2 tbsp finely chopped fresh flat-leaf parsley

How to Make Sour Cream Scones

Cooking time: 15mins + 30-35 min in oven( with a fan)
Ingredients:
300ml soured cream
400g of flour
A pinch of salt
1tbsp of caster sugar
50g butter
1tsp of baking powder
Method:
Mix soured cream with some salt and sugar. Mix flour with bang powder in a big bowl. Grate the butter on the grater and then mix everything together.
Mix the dough with your hands for about 5 minutes until it is nice, even and thick.
Make a sausage shape out of the dough and then cut approximately 1.5 cm thick pieces and shape them into scones.

Giant Meringues

One sunny morning next to my door I found a magazine sent to us by our local Sainsbury’s supermarket. It was full of recipes and this one is the best – it uncovers how to make their famous 76p giant meringues with chocolate powder or raspberry jam. Lovely!

How to Bake an Apple Strudel

Total time approximately 1 hour
Ingredients:
Package of puff dough containing 2 sheets – thawed
4 large apples Granny Smith – peeled, cored, sliced
75g butter – melted
100g dried apricots – cut in quarters
50g golden raisins (optionally)
2-4 teaspoons of ground cinnamon
½ teaspoon of ground nutmeg
50g almonds – chopped
50g walnuts – chopped
75-100g light brown sugar

Powdered sugar
